EASY VEGAN CHICKPEA TUNA SALAD
INGREDIENTS:
2.5 cups of cooked chickpeas (if using canned, drain & rinse)
1/3 cup diced celery
1/3 cup diced onion (can use any kind)
2-3 pickles, diced finely
3 tbsp roasted seaweed, chopped finely
1/2 cup vegan mayo + more if want it creamier
1 tsp salt
1/2 tsp black pepper
red pepper flakes, optional for some spice
RECIPE:
Mash the chickpeas in a large bowl using a potato masher or fork. Leave some whole chickpeas for texture. Add the rest of the ingredients in and mix until thoroughly combined. Taste and adjust flavor if need be. Sometimes, I add some lemon juice or hot sauce. Enjoy with crackers, on toast, in a sandwich, etc. It’s soooo good!
