CREAMY VEGAN PEANUT SAUCE

INGREDIENTS:

  • 1/2 cup peanut butter, unsalted & natural

  • 1/3 cup tamari or soy sauce if not gf

  • 1/3 cup sesame oil

  • 1/4 cup rice vinegar

  • 2-3 tbsp chili paste (sambal oelek)

  • 1-2 tbsp coconut sugar or brown sugar

  • fresh ginger, finely chopped (a small knob or more if you want it xtra gingery)

  • 1-2 garlic cloves, finely chopped

  • water to thin out

RECIPE:

Mix all of the ingredients in a large bowl, besides the water. Start adding water in a couple tbsp at a time and whisking continuously. There’s no correct amount of water to be added. It depends on how thick you want your peanut sauce. This sauce will also thicken if kept in the fridge, so you can always add more water if you’re not using the sauce right away. I use this sauce for stir-fry, salad, veggies, etc. It’s addicting!
